- Ingredients:
- 5 lbs Ground Venison
- 2 1/2 tsp Cracked Pepper
- 2-1/2 tsp Mustard Seed
- 3-1/2 tsp Garlic Salt
- 2 tbsp Hickory Smoked Salt
- 5 tsp Curing Salt*
- *Morton Tender Quik works well
- Directions:
- Mix all ingredients well and knead like bread dough. Refrigerate for 24 hours. Mix again, knead again and refrigerate another 24 hours. Repeat this process once more for a total of 72 hours. Form into two or three short rolls and place on a broiler pan that will allow juices to drain as it bakes and makes its own crust. Bake at 150 degrees for approximately ten hours, turning meat over after five hours so each side will brown. Cool before slicing.
