- Ingredients:
- 2 lbs Snapping Turtle
- ½ stick Butter
- 1 medium Onion
- 2 cups Celery
- 1 can Lima Beans
- 3 medium Potatoes
- 3 medium Carrots
- 1-12 oz can Tomatoes
- Salt
- Pepper
- Directions:
- Cut turtle meat in 1” pieces, and brown on all sides in butter in frying pan. Remove from heat. Boil enough water, but not too much, in stew pot for the onion, celery and Lima Beans. Slice onion, dice celery and drain Lima Beans and add all to boiling water. Simmer these for ½ hour. Add browned snapper and melted butter. Dice potatoes, cut up carrots and add these and the tomatoes to the pot. Salt and pepper to taste. Cook slowly for 45 minutes more. (Option: add a few drops of Tabasco Sauce or Louisiana Hot Sauce for a little extra zing)
