Pheasant Schnitzel
Ingredients:

2 Pheasant Breasts
Flour
Fine, Dry Breadcrumbs
1 Egg
Salt & Pepper
Butter or Margarine

Ingredients:

Bone out and skin pheasant breasts. Flatten breasts to about 1/4 inch. Dredge in flour, dip in beaten egg, and dredge in breadcrumbs. Salt and pepper to taste. Melt butter in skillet over medium-high heat and fry pheasant until golden brown turning once.
